EASY HOMEMADE EGG FRITTATA

 I'm here to give you another amazing recipe of an egg frittata this is basically eggs mixed with vegetables and it's either baked or fried. Its a must try for the weekend!!



INGREDIENTS:

• 2 cups mixed vegetables of choice

(carrots, bell peppers, cabbage)

• 1 small sweet potato(chopped thinly)

• 4 eggs

• Seasoning cube 1

• Curry & thyme
 Pepper, Onions, roughly chopped

DIRECTIONS:

1.Place a pan on medium heat and

add vegetable oil and heat up.

2.Add the potatoes and stir until its cooked, then add onions and the chopped vegitables.

3.Add the seasoning cube and spices. Fry until they are soft.

4.Take down and allow to cool.

5.Add the stir fried veggies to a bowl and add in the eggs and mix this, add a pinch of salt for taste.

6.Line a muffin pan with oil and add in the
mixture.

7.Bake at 180°C for 25 minutes and its ready.

Alternatively, add the mixture into a pan, cover and cook on low heat until it's firm.. cut into your desired size and serve.




This can be served as a meal with a side of tea or juice, or can be served as a side dish.
